After Thanksgiving, Americans will throw out $282 million of uneaten turkey, according to estimates from the Natural Resources Defense Council. If you find yourself with a bounty of turkey or ham left on the table after your Thanksgiving feast, don’t just toss it. Instead, freeze the leftovers in freezer-safe plastic bags to be used later in recipes. Mark the bags with the dates and contents and then rest easy that you are not contributing to an overabundance filling our county’s landfills after a day of giving thanks. Southwest Minneapolis has good weather in store for the Thanksgiving holiday, whether you're flying out or staying here. The National Weather Service is forecasting sunny weather for most of the week. Travelers on Wednesday should be able to enjoy a high of 61degrees before they leave. Those staying in town for the holiday will see temperatures reach 56 degrees on turkey day. Forecasters expect it to get colder after Thanksgiving. Black Friday shoppers should bundle up against lows that are supposed to dip to 22 degrees Thanksgiving night, with a chance of flurries. Highs should drop to 30 degrees on Friday and stay around there Saturday. The National Weather Service is also predicting the following weather for major cities:

Sears and Walmart plan to open at 8 p.m. Thanksgiving Day, while Target plans a 9 p.m. opening.
Retail workers and shoppers are once again pushing stores to stay closed on Thanksgiving Day instead of starting Black Friday on Thursday, as many plan to do. Southwest Minneapolis has no big-box retail stores, but nearby stores on Minneapolis' East Lake Street, in Richfield, in Edina, and in St. Louis Park serve its residents. As previously reported by Patch, Target will launch its Black Friday sale at 9 p.m. on Thanksgiving Day, while Sears and Walmart have announced plans to open at 8 p.m. Meanwhile, Best Buy is continuing the midnight openings it started last year. I don't even throw out my turkey carcass. It goes into a huge pot of water the next morning with onion and garlic and simmers until the last bits of meat come off the bones. I then drain the broth out, add the bits of meat back in and add whatever is handy, chopped vegetables, rice, noodles, fresh herbs and simmer until all is tender.
