Butter Bakery Re-Opening Today

Kingfield/Lyndale cafe moved in order to expand.

After about one week after shuttering the doors of its Grand Avenue location for good, popular coffee shop Butter Bakery Cafe is poised to open for business again.

Faced with surging popularity and unable to expand in its former location, owner Dan Swenson-Klatt decided to move Butter to a larger storefront at 3700 Nicollet Avenue South. The new location's doors will open at 7 a.m. on Monday, according to Butter's Facebook page, after a week of final construction, moving, and city inspections.

The cafe is now divided into a "computer" area, a coffee bar, and a "dining" area. Along with an expanded dining room, Butter's kitchen and food prep spaces have also been expanded, and a second register added to deal with the heavy volume of traffic durring brunch hours.

Swenson-Klatt thanked students from Kingfield's Lake Country School for helping him and his staff move supplies and equipment from the old location to the new one.

What do you think of Butter's new digs? How does it compare to the old space?
