With the arrival of high summer, sometimes the large amount of local produce at Southwest Minneapolis' three farmers markets can be too much of a good thing—what do you do with all those vegetables?
With that in mind, the Fulton Farmers Market will be bringing in Tricia Cornell this Saturday morning to give you some guidance. Cornell is the author of Eat More Vegetables: Making The Most of Your Seasonal Produce. In addition, you'll be able to find the following vegetables:
- Sweet corn
- Sungold cherry tomatoes
- Fresh onions and fresh garlic
- 3-variety Radishes (the last until the fall)
- La Ratte Fingerling Potatoes
- Microgreens
- Summer squash
- Salad mix
- Beets
- Broccoli, chard, cauliflower, and kale
- Green beans
- Basil and parsley
- Cucumbers
- Speckled Roman tomatoes
At the Kingfield Farmers Market on Sunday, grab lunch from Foxy Falafel, Chef Shack, or Gai Gai Thai. For veg, you'll find:
- Sweet corn
- Cauliflower and broccoli
- Eggplants
- Peppers
- Green beans
- Fennel
- Beets
- Tomatoes
- Greens
- Garlic and onions
- Potatoes
- Summer squash
- Cucumbers
- "Mounds" of basil, mint, parsley and cilantro
At the Linden Hills Farmers Market on Sunday, look for folks from the Center for Energy and Environment for tips on saving energy, plus these vegetables and much more:
